Ingredients

150 g amaranth/ oatmeal

1 vanilla pod

800 ml almond milk

1 lemon

8 eggs

2 tbsp honey or stevia

1 kg quark (0,2% fat)

1 tbsp cinnamon

½ tsp ground piment

1 pinch of ground cardamom

½ tsp ground ginger

1 pinch of ground cloves

½ tsp nutmeg

4 pears

50 g planed almonds

Instructions

• Prepare amaranth with almond milk/ heat almond milk with oatmeal.

• Wash the lemon and rub off the shell

• Separate the eggs

• Mix egg yolk with honey and stir frothy; add rubbed lemon shell, cinnamon, cardamom, ginger, cloves, nutmeg

• Fold in the quark and amaranth/ oatmeal

• Peel the pears and cut them into slices

• Beat egg white until stiff and fold in the quark mixture

• Line a baking form with baking paper or use a silicon form

• Fill in the mixture into a baking form

• Put it/ stick in the pears

• Sprinkle with almonds

• Bake in the preheated oven at 180 °C for 45 – 50 minutes. Check with toothpick

 

TIP: Replacing honey with energy free natural sweeteners (such as stevia, erythritol, etc.) help lower carbs and induces lower blood glucose rise compared to sugar (honey) containing foods.
