200 g cherry tomatoes

100 g mushrooms

15 ml olive oil

100 g spinach leaves

3 eggs

50 g ham or tofu

Salt, pepper


• Pre-heat oven to 175 °C

• Put the tomatoes and mushrooms on a casserole-dish and add olive oil, salt, and pepper

• Drain water from spinach. Mix spinach with the eggs, salt, and pepper.

• Form the muffins with the ham (or tofu) and add the spinach mix

• Bake for 10 minutes, then add the tomatoes and mushrooms and back for another 10 minutes
