250 g zucchini

1 small onion

¼ garlic clove

¼ can of tomatoes with pieces

50 g cream cheese

2 tbsp low fat milk

½ tbsp tomato paste

40 g low fat grated cheese

50 g tofu

1 tbsp sunflower oil

1 tsp oregano, thyme, parsley, paprika powder

salt, pepper


• Preheat oven at 200°C.

• Clean zucchini and cut in slices.

• Heat oil in a pan and brown zucchini slices.

• Cut onion, garlic and tofu in cubes and brown in pan.

• Add tomato paste, tomatoes, herbs and spices; simmer for 5 minutes.

• Mix cream cheese, milk and grated cheese; spice with salt, pepper and nutmeg.

• Stack zucchini, tofu-mixture and cheese-mixture in a baking form.

• Bake for 30 minutes.
